Ingredients:
1 can (5 oz) tuna, drained
1/2 cup gluten-free breadcrumbs
1/4 cup chopped green onions
1/4 cup chopped parsley
1 large egg, beaten
1 tablespoon Dijon mustard
1 tablespoon lemon juice
Salt and pepper to taste
2 cups mixed greens (spinach, arugula, etc.)
1 tablespoon olive oil
1 tablespoon lemon juice (for dressing)
Salt and pepper to taste
Instructions:
In a bowl, combine the drained tuna, gluten-free breadcrumbs, chopped green onions, chopped parsley, beaten egg, Dijon mustard, lemon juice, salt, and pepper.
Mix until well combined and form into small patties.
Heat a non-stick skillet over medium heat and add a little olive oil.
Cook the tuna cakes for about 4-5 minutes on each side or until golden brown.
In a separate bowl, toss the mixed greens with olive oil, lemon juice, salt, and pepper.
Serve the tuna cakes on a bed of dressed greens.
