Tuna Cakes with Greens & Lemon Dressing

Ingredients:

  • 1 can (5 oz) tuna, drained

  • 1/2 cup gluten-free breadcrumbs

  • 1/4 cup chopped green onions

  • 1/4 cup chopped parsley

  • 1 large egg, beaten

  • 1 tablespoon Dijon mustard

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

  • 2 cups mixed greens (spinach, arugula, etc.)

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice (for dressing)

  • Salt and pepper to taste


Instructions:

  1. In a bowl, combine the drained tuna, gluten-free breadcrumbs, chopped green onions, chopped parsley, beaten egg, Dijon mustard, lemon juice, salt, and pepper.

  2. Mix until well combined and form into small patties.

  3. Heat a non-stick skillet over medium heat and add a little olive oil.

  4. Cook the tuna cakes for about 4-5 minutes on each side or until golden brown.

  5. In a separate bowl, toss the mixed greens with olive oil, lemon juice, salt, and pepper.

  6. Serve the tuna cakes on a bed of dressed greens.
