Black Bean Brownies

This black bean brownie recipe offers a delightful twist on the classic dessert, infusing it with nutritious ingredients while maintaining a rich, indulgent flavor. By replacing traditional flour with pureed black beans, these brownies become dense, fudgy, and packed with fiber and protein. Combining cocoa powder, brown sugar, and a touch of vanilla extract creates a decadent chocolatey taste that satisfies even the most discerning sweet tooth. These brownies are not only a healthier alternative but also cater to various dietary preferences, including gluten-free and vegan lifestyles, making them a versatile and guilt-free treat for any occasion.



Ingredients:

  • 15 oz black beans

  • 2 eggs or flax eggs

  • 2 tbsp olive oil

  • 3-1/2 oz dark chocolate, melted

  • 1/4 cup dark cocoa powder

  • 1 tsp baking powder

  • 1/2 cup brown sugar

  • 2 tsp vanilla extract

  • 1 pinch salt

  • 1 cup walnuts, chopped


Instructions:

  1. Preheat the oven to 350 F. Lightly grease a cake tin, and line the base with parchment paper, extending over two opposites.

  2. Combine all the ingredients except the walnuts in a food processor. Process until smooth and well combined.

  3. Spoon the mixture into the prepared tin and smooth the surface. Sprinkle the walnuts over the top and gently press into the mixture.

  4. Bake for 25 minutes, until the brownie is firm to a gentle touch. Leave in the tin for 5 minutes, then lift out onto a wire rack and slide the paper out. Leave to cool completely, then cut into squares.
