Banana Walnut Pancakes

Ingredients:

  • 2 1/2 cups whole wheat flour

  • 1/2 cups gluten-free rolled oats

  • 1 1/2 Tbsp baking powder

  • 1 tsp sea salt

  • 1 1/2 tsp ground cinnamon

  • 2 medium ripe bananas

  • 1 1/2 Tbsp vanilla extract

  • 2 1/2 Tbsp maple syrup

  • 2 1/4 cups soy milk (or milk of your choice)

  • 3/4 cups chopped raw walnuts


Instructions:

  1. Mix wet ingredients.

  2. In a separate bowl, mash bananas.

  3. Add the wet ingredients and bananas to the dry ingredients and mix.

  4. Heat a large pan over medium heat.

  5. Once hot, spoon batter onto skillet. Cook until surface of pancakes have some bubbles and the edges appear dry.

  6. Flip pancakes and cook until browned on the underside.

  7. Serve and top with more bananas, walnuts, and maple syrup.
